Granada's serious answer to the Pacific cuisine trend — Cali's Chocó-style seafood done with technique and tradition in equal measure.

Cali's relationship with Pacific cuisine runs through the Chocó immigration that defined Granada in the 1980s. El Falso treats that heritage seriously. The encocado de camarón uses fresh Pacific shrimp, the coconut milk is made in-house from Tumaco coconuts, and the achiote oil colors the dish the way it should. The sancocho de gallina is a slow-simmer six-hour version with hen (not chicken) — the broth tastes of celery and cilantro and bone. Order the cazuela de mariscos to share. Granada is walkable nightlife after — and El Falso's bar program runs late on weekends.
